THE HOUSE FAWZI BUILT
Fawzi was a host before he was a cook
In 1953 he opened a dining room in a stretch of pine forest above Broumana — wooden frame, no walls, an open kitchen, charcoal in the back
He served the food his mother and his neighbours served at home
People came in the summer for the cool of the pines, and came back through the autumn
Then they kept coming, for seventy-three years
In 1981 a critic from Le Réveil arrived unannounced and left writing "trente-trois ans de bonne cuisine"
